El Árbol Farm is run by an experienced farmer, Claudio Lovo, who focuses on the production of select coffee with an emphasis on sustainability. The farm is also partly owned by Saša Šestić, the world barista champion, and thanks to his influence, the farm uses the carbonic maceration method – a technique inspired by winemaking that highlights the fruity and complex flavors of the coffee. This innovative approach allows the El Árbol farm to produce coffees with an exceptional flavor profile that will surely impress fine coffee lovers.

- We grind the coffee to medium coarseness. 20 clicks on Comandante, 7.5 on Ditting 807 LS, 6 on EK43.
The preparation is divided into two quick infusions of 100 and 150 ml.
1. 50 g circular, 50 g to the center
Time: 0:00-0:10
2. 100 g circular, 50 g to the center
Time: 0:50-1:00
The total extraction time should be up to 3:00 min .

We always recommend using filtered water, a scale and freshly ground coffee for preparation.
We use an April brewer to prepare filter coffee at Nordbeans.

The El Árbol farm is located in the Nueva Segovia region, in the Dipilto area, in the north of Nicaragua. This region has a mild climate and an altitude of around 1,200 to 1,500 meters above sea level, which provides ideal conditions for growing premium coffee. Claudio Lovo, who runs the farm, focuses on sustainable agriculture and the care of natural resources. The combination of rich soil and a thoughtful approach to cultivation gives coffees from the El Árbol farm their typical character.
Processing
El Árbol Maracaturra is processed with the innovative method of carbonic maceration, which the farm adopted thanks to the collaboration with Saša Šestić. Inspired by winemaking, this process involves fermenting coffee in a closed environment with the addition of carbon dioxide. The result is a more intense fruit profile and pronounced acidity, which gives the coffee its unique character. The Maracaturra variety, a hybrid between Maragogipe and Caturra, is known for its larger grain.
