Renato Sánchez started out with a traditional farm, but instead of settling for average, he decided to go all-in on premium coffee. With the support of Benjamin Paz, one of the greatest figures in the Honduran premium scene and our long-time partner and friend, he transformed his farm into a place where coffees are created with incredible elegance and precision. The Owl from La Cidra is proof of this. The washed processing brings out its pure acidity, delicate sweetness and creamy texture, which are fully expressed in the espresso.

- ADVICE:
Always keep the coffee closed in its original packaging so that the beans do not degrade.
1. Weigh the recommended dose.
2. Press the ground coffee evenly with a tamper.
3. Check the correct volume of espresso on the scale.
4. Adjust the grinding coarseness according to the extraction speed ( the finer the coffee is ground, the longer the extraction time will be).
A tip from our barista
Always use well-aged coffee for espresso. Preferably between 2-4. a week from roasting. We recommend using high-quality, filtered or at least bottled water. After pressing the coffee with the tamper, be careful of impacts with the lever. Cracks in the puck turn into channels that lead to under-extracted espresso.

I really enjoy choosing this Colombia because the combination of the two varieties adds a certain amount of complexity and fun to the coffee that can sometimes be lost in washed-out coffees from South America. Variety Caturra gives the espresso a full, sweet body, the texture of which is reminiscent of cream. Pink Bourbon adds a certain freshness and sparkle to the coffee, which is manifested mainly by a light hint of flowers in the aroma and a constellation of fruits in the taste."

Finca El Jardín is located in the picturesque Tolima region of Colombia, known for its ideal conditions for growing premium coffee. The farm is located at an altitude of around 1750 meters, which contributes to the slower ripening of the coffee cherries and thus their more intense flavor profile. This area is characterized by rich volcanic soil that gives the coffee fullness and complexity. Jorge Elías Rojas, the owner of the farm, carefully oversees every step of cultivation to ensure that each coffee bean fully reflects the unique terroir of the site.
Processing
Jorge focuses on the traditional washed processing method that is typical of high quality Colombian coffees. The cherries are carefully picked by hand and then fermented for 36 hours, which gives the coffee its characteristic purity and balance. After fermentation, the grains are carefully washed with mountain water and then dried on raised beds. This process ensures that the coffee retains its natural sweetness and the complex flavor profile typical of Finca El Jardín.
