Both brothers are among the founders of the Choice Coffee Association in Brazil and are proud of a number of successes in the prestigious Cup of Excellence auction. We are happy that our basic espresso comes from this legendary family.

  • ADVICE:
    Always keep the coffee closed in its original packaging so that the beans do not degrade.

1. Weigh the recommended dose.

2. Press the ground coffee evenly with a tamper.

3. Check the correct volume of espresso on the scale.

4. Adjust the grinding coarseness according to the extraction speed ( the finer the coffee is ground, the longer the extraction time will be).

A tip from our barista

Always use well-aged coffee for espresso. Preferably between 2-4. a week from roasting. We recommend using high-quality, filtered or at least bottled water. After pressing the coffee with the tamper, be careful of impacts with the lever. Cracks in the puck turn into channels that lead to under-extracted espresso.

Localities

The São Silvestre farm, run by the Andrade brothers, is located in the Serra do Salitre region of the Cerrado Mineiro region in northern Minas Gerais state, Brazil. The area is known for its ideal conditions for growing coffee, including an altitude between 1,100 and 1,220 meters above sea level and a perfect balance between wet and dry seasons. These natural conditions, together with the volcanic soil, create an ideal environment for growing the Yellow Icatu, Yellow and Red Catuaí varieties.

Processing

The first step is to use a modern optical sorter on coffee cherries. This ensures that only perfectly ripe and undamaged cherries are selected for further processing. This process greatly contributes to the overall quality of the coffee as it enhances the consistent flavor of all beans. After sorting, the coffee is processed using the traditional natural method. This means the cherries are sun-dried in their natural state, allowing the kernels to retain more sugars and develop complex flavors.

Character

Brazilian coffees are typical for their intense body and sweet taste of chocolate and nuts. But Horizon offers much more. The aroma will appeal to you with notes of cream and ripe peaches. This character of the taste combines with milk chocolate and sweet nut butter. The Horizon has a full, creamy body that floods you with a sweetness that lingers on your tongue long after you've finished your espresso. In combination with milk, you can look forward to a balanced and sweet cappuccino with a delicate taste.
