We are incredibly happy to present to you another harvest of naturally processed coffee from the village of Keramo. It proves to us every year that we couldn't have made a better choice years ago and is always one of the best coffees of the season. When we say natural Ethiopia, we imagine Keramo - floral aroma, light tea body, sweet taste of peaches and tropical fruits with a long aftertaste.
We discovered it together with the villages of Shantawene and Bombe during our trip to Ethiopia in 2018. Since then, we have been working closely with local producers and this is where most of our attention is directed when choosing Ethiopian coffees. The wonderful character of the local coffees is primarily due to the work of the employees of the processing station. They place great emphasis on the division of coffees according to their origin, collection date and maturity, thanks to which they can control the processing process itself much better. You can look forward to a wonderful cup of Ethiopian coffee with the juicy character of apricots, black tea and tropical fruits.

- Coffee 15 g
- Water 250 ml
- Temperature 96 °C
- Time 2:30 min
- Grind the ceramic to a medium coarseness. 20 clicks on Comandante, 7 on Ditting 807 LS, 6.5 on EK43.
The preparation is divided into two quick infusions of 100 and 150 ml.
1. 50 g circular, 50 g to the center
Time: 0:00-0:10
2. 100 g circular, 50 g to the center
Time: 0:50-1:00
The total extraction time should be up to 3:00 min .

We always recommend using filtered water, a scale and freshly ground coffee for preparation.
We use an April brewer to prepare filter coffee at Nordbeans.

Localities
All coffees of the Dukamo family are produced in the Sidama region in the south of the country. Local coffees are often grown at altitudes exceeding 2,000 meters above sea level. Hundreds of small farmers pick cherries from their gardens, which then take them to a common plant in the village.
Processing
We still remember how impressed we were by the work of the entire Keramo processing station team. Each bag of cherries was marked on a shared chart with the name of the farmer and a note about the quality. Based on this data, it then controls the entire processing and drying process.
Character
The heat of the aroma is dominated by notes of flowers reminiscent of jasmine. As it gradually cools, notes of ripe peaches begin to appear. What we like most about Keram is the soft, delicate body, whose taste is complemented by black tea with honey, peaches and vanilla. The sweet aftertaste guarantees that you won't forget Keramo!
