Miroroma AA is the pure essence of Kenyan terroir. It comes from the Aberdare Mountains, where it is grown by hundreds of small farmers. Processing is in the hands of a washing station, which, thanks to precise procedures, creates a juicy and sweet cup.

The coffee comes from the Muranga region, where it matures at an altitude of between 1,800 and 1,900 meters above sea level. It is a carefully selected batch of SL28, SL34, Ruiru 11 and Batian varieties, which together create a rich flavor profile. The cherries are hand-picked and then undergo a thorough wet processing process, which is typical for coffees from Kenya.

  • Coffee 15g
  • Water 240 ml
  • Temperature 92°C
  • Time 2:40 min
  • We grind rather coarsely: 24 clicks on Timemore Chestnut, 7.5 on Fellow Opus or 8.5 on EK43.

We divide the preparation into three quick infusions.

1st infusion 00:00 – 00:10 – 40g within 10 sec, spin and leave for 20 sec
2nd infusion – 00:30 – 00:40 – 60g within 10 sec, spin and leave for 10 sec
3rd infusion – 00:50 – 01:10 – 140g within 20 sec and leave alone

The total extraction time should be within 2:40 min .

Our barista's tip

We recommend using filtered water, a scale and freshly ground coffee for preparation. At Nordbeans, we use an April brewer with matching filters to prepare filtered coffee. They help us easily achieve even extraction, full flavor and high sweetness.

Localities

The coffee comes from the Muranga region, which lies on the fertile eastern slopes of the Aberdare Mountains. The area is renowned for its red volcanic soil and ideal climate, making it a key agricultural centre. In addition to coffee, the hills are covered with tea plantations, avocado and macadamia nut orchards, complemented by the cultivation of bananas and maize on small farms called “shambas”.

Processing

Washed processing emphasizes the purity of the resulting profile and the natural character of the beans. After removing the skin and pulp, the coffee is thoroughly washed in clean water and then dried on African beds for several days.

Character

This Kenyan filter has sweet and spicy notes, complemented by cherry and honey. The overall profile is highlighted by a fresh citrus line with a touch of blackberry.
