We have been working with Samuel from El Cambalache for the seventh season and his coffees are among our annual favorites. His specialty is the Maracaturra variety, typical for Nicaragua, with which he wins every year in the Cup of Excellence auction competition. Thanks to these auction competitions, it raises the quality of its production every year - from farming to processing. The result is always extremely sparkling coffees full of fruity flavors that we can't wait for every season.

We will be the first to present the Maracaturra variety, processed with the Honey method, which will remind you of vanilla cream, grapes and flowers with its sweetness.

Preparation

  • Káva 15 g
  • Voda 250 ml
  • Teplota 94 °C
  • Čas  2:20 mn
  • El Cambalache meleme na střední hrubost – 22 clicků na Comandante, 8,5 na Ditting 807 LS, 6,5 na EK43.

Přípravu rozdělujeme do dvou rychlých nálevů po 100 a 150 ml.

1. 50g  vody krouživým pohybem, 50 g vody do středu 
Čas: 0:00-0:10

2. 100g vody krouživým pohybem, 50g vody do středu 
Čas: 0:50-1:00

Celkový čas extrakce by se měl pohybovat do 3:00 min.

Tip našeho baristy

K přípravě vždy doporučujeme používat filtrovanou vodu, váhu a čerstvě namletou kávu. 

Na přípravu filtrované kávy v Nordbeans používáme April brewer.

Lokalita

Vesnice Dipilto je součástí oblasti Nueva Segovia na severu Nikaraguy, poblíž hranice s Hondurasem. Ačkoliv se jedná o nejmenší producentský region, rozhodně mu to neubírá na slávě – stačí se podívat na výsledky aukční soutěže Cup of Excellence a hned budete mít jasno, kde se pěstují nejlepší kávy z Nikaraguy. Za úspěch vděčí především vysoké míře zalesnění a hlinitopísčité půdě s dobrou drenáží, což náramně prospívá produkci výběrové kávy. 

Zpracování

Zpracování kávy je pro Samuela posledních několik let hlavním tématem rozvoje. V pražírně milujeme jeho odrůdu Maracaturra zpracovanou metodou Honey, kterou každoročně posouvá dopředu. Letos zrnka nechal po vyloupání 12 hodin fermentovat s dužinou v otevřených kádích, načež je 21 dní sušilv polostínu na afrických postelích.

Charakter

El Cambalache potěší všechny fanoušky sladkých, ovocných filtrů s jiskrnou aciditou. Zamilovali jsme si její intenzivní aromat květin a chuť vanilkového krému, která je skvěle navázaná na vysokou sladkost. Kromě ní v chuti objevíte hrozny a peckové ovoce jako zralé meruňky, které přetrvávají v dochuti ještě dlouho po dopití každého doušku.
