We are excited to present the next harvest of our popular Ethiopian coffee from the village of Keramo. This washed coffee from the Sidama region enchanted us with its freshness and elegant taste dominated by apricot, green tea and honey. Every year, Keramo is one of the highlights of our offer, mainly thanks to the unique conditions in which the coffee is grown and the precise work of the employees of the processing station.
For us, Ethiopia, and especially the Sidama region, has long been synonymous with exceptional quality and selection of coffee. We have been working with the Dukamo family since 2018 and their washed coffees are among the best this region has to offer. Keramo Washed will delight you with fresh acidity and a tea body that will please all lovers of African espresso coffees.

- ADVICE:
Always keep the coffee closed in its original packaging so that the beans do not degrade.
1. Weigh the recommended dose.
2. Press the ground coffee evenly with a tamper.
3. Check the correct volume of espresso on the scale.
4. Adjust the grinding coarseness according to the extraction speed ( the finer the coffee is ground, the longer the extraction time will be).
A tip from our barista
Always use well-aged coffee for espresso. Preferably between 2-4. a week from roasting. We recommend using high-quality, filtered or at least bottled water. After pressing the coffee with the tamper, watch out for impacts with the lever. Cracks in the puck turn into channels that lead to under-extracted espresso.

Localities
Keramo village is located in the Sidama region, at an altitude of around 2300 m above sea level, making it one of the highest growing areas in Ethiopia. Thanks to these conditions, coffees with a unique taste profile are created here, which are characterized by strong acidity and fresh fruity notes. Sidama is one of the most important regions for the cultivation of premium coffee, and it is in this area that the Dukamo family has its processing station, where the cherries from the surrounding farms are carefully sorted and washed.

Processing
Keramo Washed is a washed coffee, meaning that the cherries have been carefully sorted and fermented in water after picking, separating them from the pulp and skin. This method of processing is characteristic of Ethiopia and allows better control of the flavor profile of the coffee. At the Keramo processing station, they place great emphasis on the quality of the cherries and the precise distribution according to ripeness, which contributes to a clean and distinctive taste. Thanks to these methods, Keramo gets its mild acidity, reminiscent of green tea, and the sweet aftertaste of honey.
