Atunkaa is a coffee that brings not only a great taste experience without caffeine, but also a strong story. It comes from the Argelia region in the southwestern part of the Cauca department in Colombia. Farmers grow this coffee with love and determination, despite the difficult conditions and high crime rates in the area. They are trying to secure their families and community through legal coffee cultivation.

- ADVICE:
Always keep the coffee closed in its original packaging so that the beans do not degrade.
1. Weigh the recommended dose.
2. Press the ground coffee evenly with a tamper.
3. Check the correct volume of espresso on the scale.
4. Adjust the grinding coarseness according to the extraction speed ( the finer the coffee is ground, the longer the extraction time will be).

- We grind Decaf to medium coarseness – 24 clicks on Comandante, 8 on Ditting 807 LS, 6.5 on EK43.
The preparation is divided into two quick infusions of 100 and 150 ml.
1. 50 g circular, 50 g to the center
Time: 0:00-0:10
2. 100 g circular, 50 g to the center
Time: 0:50-1:00
The total extraction time should be up to 3:00 min .
A tip from our barista
Always use well-aged coffee for espresso. Preferably between 2-4. a week from roasting. We recommend using high-quality, filtered or at least bottled water. After pressing the coffee with the tamper, be careful of impacts with the lever. Cracks in the puck turn into channels that lead to under-extracted espresso.
We use an April brewer to prepare filter coffee at Nordbeans .

The process includes gentle steaming, washing with natural ethyl acetate and rapid drying, which ensures high quality and flavor stability. The coffee retains its full flavor with subtle notes of apricot jam, cream and oranges. This process is sustainable and preserves the natural flavors of the coffee.
