Just like the arctic foxes that roam the snowy plains, we also reunite with those we love most when winter comes. It draws us to the warmth of home. Our Naali Christmas coffee combines two paths, two worlds, two taste profiles – coffee from Kenya and coffee from Brazil. Each of them is different, but together they form a harmony that evokes memories of moments with our closest ones through a flavor profile full of sweet notes of Linnaeus, marmalade and marzipan.
This year we wanted to create something that is not only about the taste of coffee, but also about the feeling of closeness, sharing and joy. Inspired by the connections that are made during Christmas, Naali brings a pleasant balance of full-bodied sweet coffee from Brazil complemented by the fruity marmalade character of Kenyan coffee. Whether you enjoy our blend as an espresso, a filter or from a moka pot, its taste will remind you of the moments when we stop together at the same table and enjoy quiet moments with those we care about.

- ADVICE:
Always keep the coffee closed in its original packaging so that the beans do not degrade.
1. Weigh the recommended dose.
2. Press the ground coffee evenly with a tamper.
3. Check the correct volume of espresso on the scale.
4. Adjust the grinding coarseness according to the extraction speed ( the finer the coffee is ground, the longer the extraction time will be).
A tip from our barista
Always use well-aged coffee for espresso. Preferably between 2-4. a week from roasting. We recommend using high-quality, filtered or at least bottled water. After pressing the coffee with the tamper, watch out for impacts with the lever. Cracks in the puck turn into channels that lead to under-extracted espresso.

Brazil - São Silvestre Farm is located in the Minas Gerais region, one of the most famous coffee growing regions in Brazil. The altitude of around 1150 m above sea level and the volcanic soil provide excellent conditions for coffee production. The Andrade brothers, who run the farm, are known for their innovative approaches, including anaerobic processing, which adds fullness and sweetness to the coffee.
Kenya - The Sarkin AB plant is located in the Nyeri region, at a high altitude of over 1900m above sea level, where some of Kenya's best coffees are grown. Thanks to the rich soil and the careful sorting of the coffee cherries in the plant, coffee is created with distinct fruity notes and fresh acidity, which are typical for Kenyan coffees.

Processing
Brazil - Coffee from the São Silvestre farm is processed using the anaerobic method. The cherries are fermented in a closed environment, giving the coffee a rich, sweet flavor profile. This method of processing contributes to the fullness and intensity of flavors that are typical for Brazilian coffees.
Kenya - Sarkin AB's Kenyan coffee is processed using a washed method that ensures its clean and bright flavor profile. The cherries are sorted according to ripeness and fermented in water, which contributes to the typical acidity and fresh fruit notes.

Character
The combination of Brazilian and Kenyan coffee creates a harmoniously balanced flavor profile. Brazilian coffee adds full body and sweetness, while Kenyan coffee brings fresh fruit notes reminiscent of currants. The flavor profile is reminiscent of Linnaeus candy, marmalade and fine marzipan.
